I’ll be honest, when I made this delicious salad I wasn’t expecting my husband to enjoy it. My hubs is a true “meat and potatoes” kind of guy and this is a salad, with green stuff, and celery. However, I was pleasantly surprised when my hubs proclaimed his love of this and even came home from work to have it for lunch the next day. It’s that good. 🙂
This is a super quick and easy recipe that you can make on those nights when you just don’t feel like cooking or during the rush of back of to school season. This is part of a clean eating diet and in case you’re just now finding my blog, I use eMeals* to plan out our meals and it is a lifesaver to say the least! - 1½ lb boneless skinless chicken breasts
- 2 (2.75-oz) packages quick-cooking wild rice
- 2 oranges, sectioned and coarsely chopped
- 1 cup chopped organic celery
- ½ cup chopped pecans, toasted
- ¼ cup chopped fresh flat-leaf parsley
- 2 Tbsp fresh lemon juice
- 1 Tbsp honey
- 3 Tbsp olive oil
- ½ tsp salt, ½ tsp pepper
- 4 cups baby arugula
- Preheat oven to 350°F.
- Place chicken in a baking dish and bake 20 to 25 minutes or until done.
- Let cool, and shred with 2 forks.
- Meanwhile, cook rice according to pkg directions; rinse under cold water to cool.
- Combine cooked rice, chicken, oranges, celery, pecans, and parsley in a serving bowl.
- Whisk together lemon juice, honey, oil, salt and pepper.
- Pour dressing over rice salad; toss well to coat.
- Serve salad over baby arugula.
