I love a good meal that could used for either lunch or dinner and one of my all time favorite meals, is a good ol’fashioned Patty Melt. If you have followed me for some time now, you know that I have a secret weapon when when it comes to meal planning because I dread it so – eMeals*.
We use the clean eating plan from eMeals (if you have read the book 100 Days of Real Food* you know why we switched to clean eating) and this delicious patty melt recipe and spicy sweet potato wedges are from one of our clean eating meal plans.
My kids eat what we eat and they both loved the spicy sweet potatoes! They weren’t too spicy for them but if you are concerned that your kiddos will not like the spice, lessen the amount of red pepper used.
Ingredients for Clean Eating Patty Melts
1 onion, cut in half
11⁄2 lb lean ground beef
1⁄2 tsp salt, 1⁄2 tsp pepper
2 Tbsp olive oil
1 (8-oz) pkg sliced fresh mushrooms
1 Tbsp whole-wheat flour
1⁄2 cup reduced-sodium beef broth
1⁄4 cup butter, softened
12 slices rye bread
6 slices provolone cheese
Ingredients for Spicy Sweet Potatoes Wedges
11⁄2 lb sweet potatoes
2 Tbsp olive oil
1⁄2 tsp salt, 1⁄2 tsp pepper
1⁄2 tsp crushed red pepper
Directions for Patty Melt
Chop enough of the onion to equal 1⁄4 cup.
Combine ground beef, chopped onion, salt and pepper; shape into 6 patties.
Cook patties in 1 Tbsp oil in a large skillet 4 minutes per side or until done; remove from pan.
Slice remaining onion; add to skillet with remaining oil and the mushrooms. Sauté 5 minutes or until tender; sprinkle flour over mushrooms, and stir.
Stir in broth; cook 1 minute or until thickened.
Spread butter on one side of each piece of bread. Place 3 bread slices, butter sides down, in a separate skillet.
Top each with a patty, cheese, mushroom mixture, and 3 bread slices; cook 2 minutes per side.
Repeat with remaining ingredients.
Directions for Spicy Sweet Potato Wedges
Preheat oven to 450°F.
Cut sweet potatoes lengthwise into 1⁄2-inch thick wedges.
Toss with olive oil, salt, black pepper, and crushed red pepper on a greased baking sheet.
Bake 30 minutes, turning once, until browned and crispy.
